Cranberry Juice
1 cups frozen Orchard Gold Cranberries
1 cup apple juice
1 cup water
Bring cranberries, apple juice and water to the boil, reduce heat and cook until the cranberries burst.   Strain juice, and add sugar to taste, if desired.
 
Simple Cranberry Sauce
Serve with turkey, chicken or pork.  Great with leftovers too.
1 cups frozen Orchard Gold Cranberries
1 cup apple juice
Pinch of cinnamon and nutmeg (optional)
Simmer cranberries and apple juice over a low heat for 5-7 minutes.
Puree in a blender, add cinnamon and nutmeg, heat again and serve.
 
Cranberry Relish
Another good recipe to serve with chicken, pork, turkey, or with cream cheese on crackers.
 2 cups Orchard Gold Cranberries  2 cups apple, peeled and diced
 1 onion, peeled and diced  2 cloves garlic, finely diced
 1 tablespoon grated ginger  1 red capsicum, diced
 ½ cup brown sugar  ½ cup raisins
 ½ cup white vinegar  
Combine all ingredients in a stainless steel pot.  Simmer gently about 30 minutes, stirring often.  If necessary add a little apple or orange juice.
 
Cranberry and Citrus Sorbet
 2 cups Orchard Gold cranberries  1 cup orange juice
 1 tablespoon lemon juice  1 cup sugar
 ½ cup water  1 tablespoon grated orange peel
 ½ tablespoon grated lemon peel  
Place the first five ingredients in a large pot over a medium heat and stir until the sugar is dissolved.  Simmer for 5-10 minutes until the cranberries begin to pop and are soft.  Cool slightly, then puree the mixture in a blender.  Strain to remove the seeds, add the grated orange and lemon peel.  Cool, then transfer mixture to a metal baking dish and place in freezer.  Freeze for 3 hours, stirring with a spoon every hour to break up the ice crystals.  Or place the mixture in an ice cream maker and process according to manufacturer’s instructions.  Serve in chilled glasses with orange or mandarin slices, wafers or other delicate biscuits.
