Jam, Preserve, Relish, SauceTrader Tom’s organic blueberry jam 1 Ingredients: 3 cups Trader Tom’s blueberries 1½ cups sugar ¼ cup lemon or lime juice Method: Place in a large heavy based saucepan and bring slowly to the boil. Cook over a medium heat for 35-40 minutes, stirring frequently. Add the lemon or lime juice, cook for another 5 minutes, then test for setting. Pour into sterilised jars and seal. Trader Tom’s organic blueberry jam 2 Ingredients: Equal quantities of Trader Tom’s blueberries and Chelsea Jam Setting Sugar Method: Follow the instructions on the Chelsea Jam Setting Sugar pack, or on http://www.chelsea.co.nz/content/Recipes/how-to/step-by-step-jam.aspx Trader Tom’s organic blueberry preserves Ingredients: 4 cups Trader Tom’s blueberries 4 large Granny Smith apples – peeled, cored, and diced 6 cups sugar ½ cup raisins ¼ cup lemon juice Method: Place all the ingredients in a large saucepan. Bring slowly to the boil, stirring until the sugar dissolves. Cook rapidly until thick, about 20 minutes. As the mixture thickens stir frequently to prevent it sticking. Pour into hot sterilised jars, leaving 1cm clear at the top of the jar. Place caps securely on jars. To process in a boiling water bath, place filled and sealed jars in a large deep saucepan completely covered with water and bring to the boil. Leave in saucepan for 15 minutes, then remove. Trader Tom’s organic blueberry relish Use a stainless steel saucepan to make this relish, not an aluminium one. Ingredients: 3 cups Trader Tom's organic blueberries 1 large onion, peeled and finely diced 1 large apple, cored, finely diced (leave the skin on) 2 gloves garlic, finely diced or minced 1 cup sultanas or raisins ¼ teaspoon each: ground cloves, chilli powder ½ teaspoon each: salt, cinnamon, allspice, curry powder, ground ginger 1 cup brown sugar ¾ cup white wine vinegar or cider vinegar Method: Put the all the ingredients in a large saucepan. Simmer gently for about 2 hours. Checking the flavour and add more chilli if desired. Place in small sterilised jars while hot. Trader Tom’s organic spicy blueberry sauce Ingredients: ½ cup sugar 1 tablespoon cornflour ½ teaspoon ground mixed spice ½ cup water 2 cups Trader Tom’s organic blueberries Juice of ½ orange (optional) Method: Combine sugar, cornflour, cinnamon and nutmeg in a saucepan. Gradually stir in the water until smooth. Bring to the boil, cook and stir for a minute, or until thickened. Stir in blueberries and return to the boil. Reduce the heat and cook a further 5 minutes, stirring frequently. Remove from the heat, add the orange juice (if desired), and stir again. Serve warm. |
