Berries for BreakfastTrader Tom’s organic mixed berry cereal boost Ingredients: 1 serving of your usual morning cereal ½ cup Trader Tom’s organic mixed berries Yoghurt, milk, or whatever else you top your cereal with Method: Place the Trader Tom’s organic mixed berries in your serving bowl the night before and leave to thaw. In the morning top with your cereal and yoghurt or milk. (Alternatively, thaw in the microwave in the morning.) Trader Tom’s organic mixed berry morning porridge – Ingredients: ½ cup rolled oats (recommend Milk Oaties or Uncle Toby’s) 1 cup milk or soy milk ¾ cup Trader Tom’s organic mixed berries Method: Put rolled oats and milk in a large bowl and place in the microwave. Cook on high for 1 minute. Stir. Microwave on high for another 1 minute and check again. If perfect the porridge will have a foam in the middle on top. If it looks thin and watery cook for, say, another 40 seconds. Don’t overcook! Add the mixed berries and microwave for 1 minute. Let stand for 1-2 minutes. Devour! Trader Tom’s organic hotcakes with mixed berries (When we make this, we double the recipe, as it goes so quickly!) Ingredients: 1 cup self raising flour 1 tablespoon sugar 1 egg 1½ cups buttermilk Butter for cooking 1 cup Trader Tom’s organic mixed berries 1 lemon Maple Syrup or Apple Syrup and yoghurt to serve Method: Place the self raising flour and sugar in a large bowl. Make a well in the centre and add the egg and buttermilk. Whisk until well combined and set aside for 30 minutes. Melt a little butter in a large non-stick frying pan over a medium heat. Pour about ¼ cup of the hotcake mixture into the frying pan. Top with a few of the mixed berries. Cook until bubbles appear on top and start popping, and the hot cakes are golden brown underneath. Turn and cook the other side for one minute. Transfer to a serving plate and cover. Repeat with the remaining batter and mixed berries. Serve with lemon slices, a little jug of maple syrup or apple syrup, and yoghurt. (Variation: if you don’t have buttermilk, use ordinary milk – buttermilk makes a very light hotcake.) |
