Jam and sauce (couli)Trader Tom’s organic mixed berry jam – microwave Instructions: 500g Trader Tom’s organic mixed berries 1½ cups white sugar 2 tablespoons lemon juice Method: Place the berries, sugar and lemon juice in a large microwave-safe bowl. Stir until well combined. Cook, uncovered on medium (50%) power for 2 minutes. Stir to dissolve the sugar, then cook for a further 3 minutes. Stir again. Cook, uncovered on high (100%) power, stirring every 3 minutes, for about 15 minutes, or until jam reaches setting point. To test for the setting point, place a teaspoon of the jam mixture on a chilled saucer. Place in the freezer for 1 minute. Run your finger through the jam – if the mixture wrinkles and stays separated then the jam is ready. Pour the hot jam into clean sterilised jars, cover with metal lids, and turn the jars upside down for about 10 minutes. Turn them back upright and leave to cool. Trader Tom’s organic mixed berry jam – stovetop This jam is great with natural yoghurt or on Vogel’s toast with butter. Ingredients: 1 packet (750g) Trader Tom’s organic mixed berries 3 cups white sugar 2 tablespoons lemon juice Method: Combine all ingredients in a saucepan and place on a low heat, stirring until the sugar is thawed. Raise the heat and boil the jam, uncovered, stirring from time to time, for about 30-35 minutes, or until the jam reaches setting point. Pour the jam into hot sterilised jars, seal with metal lids, invert the jars until cold. Trader Tom’s organic mixed berry sauce – couli Ingredients: 2 cups Trader Tom’s organic mixed berries 2 tablespoons icing sugar Squeeze of lemon juice Method: Place mixed berries in a saucepan and bring to a simmer. Take off the heat and mix in the icing sugar. Add a squeeze of lemon juice if required. Puree with a blender and if desired, sieve the couli to remove the seeds, before using. Great with yoghurt, ice cream, pancakes and crepes, pavlova, cheesecake … the list is endless. |
