Trader Tom’s organic mixed berry cocktail
Ingredients:
2 cups Trader Tom’s organic mixed berries
1 tablespoon sugar
Vodka
1 cup ice cubes
1 cup cranberry juice
1 bottle lemonade or soda water
Fresh mint sprigs

Method:
Place the mixed berries in a bowl, sprinkle with sugar, and cover half way up with vodka.  Place in the fridge for about 4 hours, turning several times so all the berries get soaked in the vodka.
Place the mixed berries, with their liquid, ice cubes, cranberry juice and a few mint leaves in a blender and process until the ice is crushed and the berries are pureed.  Pour into a tall glass jug, add another 4 shots of vodka and top up with lemonade or soda water.  Stir.  Serve in tall glasses with a sprig of mint to decorate.

Variations:  Replace vodka with gin or white rum.  Replace cranberry juice with orange or apple.
A non-alcoholic version can be made by soaking the berries in pineapple juice.
