Orchard Gold Raspberry Couli

Raspberry Couli is a thick raspberry sauce without the seeds.  It's perfect with ice cream, yogurt, fresh or poached fruit, cakes, and desserts.   And don't stop at making a Couli with raspberries - all Orchard Gold berries make great Coulis.

Add a liquor to the Couli for special occasions - try a raspberry liquor like Chambord, or add a little rum, brandy, or whiskey.

 
Raspberry Couli
2 cups Orchard Gold raspberries
2 tablespoons caster sugar
Lemon juice to taste

Place the raspberries and the castor sugar into a saucepan and gently simmer for a few minutes until the sugar has dissolved.  Puree with a stick blender, then strain through a fine sieve to remove the seeds.  Add the lemon juice to your taste.

Mixed Berry Couli
2 cups Orchard Gold mixed berries
2 tablespoons caster sugar

Place the mixed berries and the castor sugar into bowl and leave to defrost.  Puree with a stick blender, then strain through a fine sieve to remove the seeds.
