Orchard Gold Cranberry Sauce and Cranberry Relish are great accompanyment to your holiday meals, served with turkey, lamb, chicken, or pork. They also work well with a slice of cheese on a cracker. These recipes are made to balance cranberries' natural tartness/sourness with sweet and fruit flavours. You'll be surprised how quickly they are eaten up!
Simple Cranberry SauceMake the day before and serve warm with the main course. Great with leftovers too!
1 cup Orchard Gold Cranberries, frozen
1 cup apple juice
A pinch of cinnamon and nutmeg
Simmer cranberries and apple juice over a low heat for 5 - 7 minutes. Allow to cool slightly before pureeing with the cinnamon and nutmeg in a blender or food processor.
Remove from fridge and heat gently prior to serving.
This is a delicious relish to add some colour to your cheese board.2 cups Orchard Gold Cranberries
2 cups apple, peeled and diced
1 white onion, diced
1 red capsicum, diced
2 cloves garlic, diced finely
1 TBsp grated ginger
1/2 cup brown sugar
1/2 cup raisins
1/2 cup white vinegar
Apple or orange juice, to taste
Simmer all ingredients gently for 30 minutes, stirring frequently. Remove from heat and add a splash of juice if desired. Store refrigerated in a sterilised container.
