18 south 3 berries in jelly

One for the children ... and one for the grown-ups.

For the children:

3 cups 18 south 3 berry mix

2 packets Raspberry Jelly

2-3 extra teaspoons gelatine
Place the 18 south berries in a flat glass serving bowl or square dish.
Make up the raspberry jellies according to the package instructions, adding the gelatine to the jelly mix. 
Pour the jelly mix carefully over the berries and place in the refrigerator until set.
New Three Berry
For the adults:
3 cups 18 south 3 berry mix

Up to ½ cup fruit juice

3 tablespoons castor sugar

2 tablespoons gelatine

2 cups sparkling wine, chilled
Thaw the 18 south berries and make up to ½ cup with the fruit juice.  Add the sugar.  Sprinkle the gelatine over the juice and set aside for 5 minutes for the gelatine to swell.  Heat the mixture over a medium heat and stir until the gelatine and sugar is dissolved.  Set aside for 10 minutes to cool slightly, then add the sparkling wine.

Place the 
18 south berries in a serving bowl or individual serving glasses.  Pour over the berries and place in the refrigerator until set.

Serve with a little mascapone, yoghurt, whipped cream or ice cream.
