1 cup yellow cornmeal
1 cup flour
¼ cup white sugar
2 tablespoons brown sugar
3 teaspoons baking powder
¼ teaspoon salt
1 cup buttermilk
6 tablespoons melted butter
1 large egg, beaten
1½ cups Trader Tom's organic blueberries
Preheat oven to 200degC
Line a muffin pan with 12 paper liners or spray to grease.
Place cornmeal, flour, sugar, baking powder and salt into a mixing bowl and stir to combine.
Whisk together the buttermilk, melted butter and egg, then stir into the dry ingredients until just barely combined. Add the blueberries and gently fold to combine.
Place the mixture into the muffin pan. Bake approx 20 minutes, or until the tops are golden brown and the muffins are cooked.
