Trader Tom's Mixed Berry Granita

Berry Granitas are so refreshing at the end of a meal - or as a cool treat on a hot summer's day.  This is an Italian dessert - intense fruit flavoured scraped ice.  


3 cups Trader Tom’s organic mixed berries
1½ cups cold water
⅓ cup castor sugar
TT Mixed Berry
Place the berries and the water in a food processor and blend until smooth.
Press the puree through a fine sieve, straining to remove any skins and seeds.
Add the sugar to the seedless puree, and stir well to combine.
Pour the puree into a freezer-proof pan, about 300mm x 200mm.
Place in the freezer for 30 minutes, then remove and scrape the frozen ice crystals from around the side back into the mixture.  Return to the freezer, and repeat this process about every 30 minutes for about 3 hours.  
You can serve as it is now, scooping up the crystals and putting them into a serving glass.
Or leave overnight, and when ready to serve, scrape the crystals off with a fork and put into a serving glass.

A little Limoncello or Chambord or other liqueur served in a shot glass and poured over the Granita at the table, makes a sophisticated dessert.

This recipe goes very well with a couple of tablespoons per serving of mixed berry compote mixed through the Granita just before serving.
