BERRY CRUMBLE SLICE

Filling

200g Premium mixed berries

2 tbsp sugar


Crumble

175g Butter

1/2 cup Brown sugar

1 tsp vanilla

Pinch salt

1 cup Oats

 1/3 Coconut

1 cup flour  (half almond flour optional)

2 tsp Baking powder

 1 tsp cinnamon

1 egg 


Preheat oven to 180 degrees c. In a pan over a low heat, simmer 200g berries with 2 tbsp brown sugar, mashing until loose jammy consistency.  Take off heat and allow to cool. In a pot melt the butter, add sugar, vanilla and pinch salt and stir until dissolved. Off the heat, mix in flour, oats, coconut, baking powder and cinnamon. Once combined stir in egg. Press 2/3 mix into approx. 20 x 20 slice tin. Spread berry mix on top. Crumble remaining crumble mix on top and lightly pat down. Bake for 35 minutes near middle of oven, or until golden brown on top. Allow to cool before slicing. Serve warm or cold - with a scoop of ice-cream or a dollop of cream!
