Raspberry & White Chocolate Blondies

Frozen raspberries are ideal for baking as they hold their shape better than fresh ones, providing tart "flavor bombs" in a sweet batter.


  • Ingredients: 2 ½ cups plain flour, 1 cup sugar, 10 tbsp melted butter, 3 eggs, 1 cup white chocolate chips, and 1 cup Orchard Gold Frozen Raspberries


  • Method: Cream butter and sugar, then whisk in eggs and vanilla. Fold in dry ingredients and white chocolate. Spread into a lined 9x9 inch pan and gently press the frozen raspberries into the top.


  • Baking: Bake at 180°C for 20–25 minutes until the edges are golden but the center remains slightly fudgy.
