High Protein Raspberry Vanilla Cheesecake


Ingredients

1 cup cottage cheese

1 cup plain yoghurt

2 eggs

1/4 cup maple syrup

1/4 cup cornflour

1 tsp vanilla bean paste

3/4 cup frozen raspberries


Method n

1. Preheat oven to 160°C and line a 20 × 15 cm dish with baking paper.

2. Place all ingredients except the raspberries into a blender. Blend until smooth and pour into the dish.

3. Scatter raspberries over the top and place in the oven.

4. Bake for 40–45 minutes or until the centre is firm.

5. Place in fridge for a few hours until cold.

Slice and enjoy!
